After the weekends PYO I now have an abundance of pears, plums and apples and a seriously dwindling supply of jars!!! A bit of a problem. A quick cyber stop on Lakeland and I had hoped that some more jars would be here by the weekend but no such luck 😦

Last night I decided to use the last of my jars and make a quick batch of apple sauce – perfect for winter nights and pork chops! So that helped use up some of the apples but we still have plenty. Hurry up Lakeland!!! I have Apple Butter to make!!

I went to work today with 2 jars of freshly made apple sauce in my handbag for Jo & Louise. When I said to Louise ‘Boy have I got a treat for you’ her face lit up…only to drop slightly when she saw a jar of apple sauce…I got the feeling she was hoping for muffins or cupcakes!!

Ingredients:-

1kg cooking apples

4 firm dessert apples

300g whie granulated sugar

Freshly squeezed juice of 2 lemons

Peel, core and roughly chop the cooking apples. Put in a large preserving pan with 400ml water and simmer for 10 minutes, or until the apples soften and break down to a puree.

Meanwhile, peel, core and cut the dessert apples into 1cm dice. Add to the cooking apples with the sugar and lemon juice. Bring the mixture to the boil, and simmer for 20 minutes until there is little excess liquid and the sauce is thick.

Pour into hot sterilized jars, seal, label, and store in a cool, dark place.
